Fun with Sushi

I've been wanting to make some sushi for a while now and I've finally gotten around to getting the supplies and doing it. I found my bamboo rolling mat at Foxfire for $5! I wrapped it in cling film to make for easier clean up. I used this website to figure out most everything.

I love the California Rolls at Whole Foods so I wanted to make mine just like theirs. They turn out AWESOME! I can't believe how easy it is to make such a healthy yummy meal! I'm planning to make them for lunches every few weeks and we also enjoyed this for dinner with a homemade spring roll (recipe coming soon)!


Servings 4 California Rolls

Ingredients

3/4 cup Sushi rice (I found this in the bulk section of my local natural foods store you can just use short grain rice also)
4 Sheets of Nori (seaweed wrappers)
1 Avacodo, cut into small strips
2 small cucumbers, cut into small strips
8 med shrimp, cooked
3 tbsp toasted seseame seeds (optional)
Soy sauce for dipping
Pickled Ginger (optional)

Prep

Cook the rice in a steamer or rice cooker or follow the instructions here to cook on the stove top. Once the rice is cooked and sticky lay a sheet of nori down on the bamboo mat. Wetting your fingers makes it easier to work with the rice. Spread a generous helping of rice on the nori. Flip the nori over so the rice is on the bottom and spread a lite layer of rice here.

Next place the avacodo, cucumber, and shrimp on top of the thin layer of rice. Take your bamboo mat and roll up.

Cut in half. Place the halfs together and cut into thirds.
