Basil Pesto

This is some super yummy stuff. If you have a lot of basil growing like we do this is a great way to use it up. A little bit of this goes a LONG way which is good because it doesn't make a lot. This is good over cooked/grilled chicken, as a pasta sauce, over crusty bread, or the topper on tomatoes! So let's make some, shall we?

Two cups clean, dry basil

Two garlic cloves

1/3 cup fresh grated good parmesan

1/4 cup toasted pine nuts

Throw everything in the food processor and chop for a few minutes.

Pour in 1/4 cup of good olive oil

Process until thoroughly combined.

We use baby food jars, you should yeild enough for one full jar. (this one was spilt and given as a gift.)
