Falafel Pita Sammie

Falafel (Arabic), is a fried ball or patty made from spiced fava beans and/or chickpeas. It is a popular form of fast food in the Middle East, where it is also served as a mezze (snack or tapas).

We've been having this for our vegetarian nights and just loving it! We did cheat and bought the premade falafel mix which makes this a breeze to fix. I'm talking dinner on the table in like 15 minutes! The spices are so warm but not spicy and the added veggies go really well. The Greek Tzatziki sauce cools it down with a hint of freshness. Although this shows two pita sammies, we figured out one would be plenty with the side of tabbouleh. This is an incredibly healthy dinner or lunch and just delicious!

Sammie
1/2 box of falafel mix, prepared via the box instructions (We make them into paddies because they fit better in the pita.)

1 large whole wheat pita, halved
1 small tomato
1 cup lettuce

Greek Tzatziki Sauce
1 (32 ounce) container plain low-fat yogurt
1/2 English cucumber with peel, grated
1 clove garlic, pressed
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 teaspoons grated lemon zest
1 tablespoon salt
1 tablespoon fresh ground black pepper

For Sauce:

Stir together yogurt, grated cucumber, garlic, lemon juice, and olive oil in a bowl. Add lemon zest, salt, and pepper; whisk until smooth. Pour into a serving dish, cover tightly, and refrigerate 8 hours before serving. (we serve immediately)

For Sammie:
Open halved pita and spread a generous amount of the Tzatziki Sauce inside. Stuff with the falafel patties and any other toppings to your desired amount.
