Italian Potato Wedges

This potato side dish is super easy to make for any meal. It’s also great for summer because is doesn’t require an oven which heats up the house, although you could use one if you prefer. We do a lot of baking and roasting veggies in our toaster oven. Not only does it take less energy to run it really does keep the heat in the house to a minimum.

Serves 2

Cut 1-2 large red potatoes into wedges
Lay out on the toaster oven baking pan
Drizzle with olive oil
Sprinkle with Italian seasoning

Add salt and pepper to taste

Bake in the toaster oven at 425 degrees until center is tender about 20-30 min
