Pine Nut & Lemon Orzo
Ingredients
1 cups uncooked orzo (rice-shaped pasta)
1 tablespoons grated lemon rind
1 fresh lemon, juiced
salt & black pepper (to taste)
3 tsp extravirgin olive oil
2 tbsp chopped fresh flat-leaf parsley
1/8 cup pine nuts, toasted
Preparation
Cook pasta according to package directions, omitting salt and fat. Drain.
Combine rind, juice, salt, and pepper in a large bowl. Slowly add oil to juice mixture, stirring constantly with a whisk. Add pasta to juice mixture; toss to coat. Cool to room temperature. Stir in parsley and pine nuts.
