Sausage, Zucchini and Penne

This is one of our regularly circulated meals. Its an easy fix and it's delicious! This could be done with pork sausage links if you can't find turkey. It's great re-heated for lunch the next day also. Enjoy!

Servings 4

3 large links of turkey Italian sausage, diced
3 med zucchini, halved and chopped
1.5 cups of mushrooms (your choice on what kind), sliced
4 cloves of garlic, minced
2 tbsp tomato paste
1 can whole peeled tomatoes, diced
Oregano, to taste
Salt and Pepper, to taste
2 cups cooked penne (we used whole wheat)
Feta cheese, to crumble on top.

In a large skillet add about 1/2 cup of the tomato juice from the whole tomato can and cook sausage, mushrooms, garlic and zucchini covered until tender. About 15-20 minutes. Add tomato paste, tomatoes and seasonings. Cook for 5-10 more minutes uncovered, stirring occasionally.

In a bowl add 1/2 cup penne pasta. On top of that add a generous amount of the sausage mixture. Finish by crumbling fresh feta over the top. Serve hot and enjoy! Also great re-heated!
