Arugula & Cherry Tomato Salad with Balsamic Drizzle
Makes 1 serving
Handful of baby arugula, de-stemmed
Handful of baby spinach, de-stemmed
2-3 Basil leaves, torn
5-8 Cherry tomatoes, halved
1 tbsp Crumbled feta
Pinch of salt & pepper
1-2 tbsp Good Balsamic vinegar
Mix the arugula, spinach, and basil together and add to the bottom of the jar. Top with tomatoes, feta, salt, & pepper. Drizzle balsamic vinegar just before serving.
