WOW, I found these cookies in my Woman's Day magazine and altered the recipe a little. They were so tasty and very flavorful. I cut some of the chocolate and sugar out of the orginial recipe to make them a little more waistline-friendly, and added raisins. Here's my version. Enjoy!
1 cup plus 2 tbsp butter, softened
¾ cup packed brown sugar
¼ cup sugar
2 large eggs
2 tsp vanilla extract
1 tsp baking soda
½ tsp salt
1 ¾ cup flour
2 ½ cup old-fashion or quick oats
1 small pack of plain M&Ms
1/3 cup raisins
1 cup chopped pecans
Heat oven to 375 degrees. Beat butter and sugars in bowl with mixer on medium speed until fluffy. Beat in eggs, vanilla, baking soda, and salt until blended.
With mixer on low speed, beat in flour to blend. Stir in oats, M&Ms, and pecans.
Drop a heaping tbsp 1 in apart onto ungreased baking sheets. Bake 10 mins until golden brown. Cool 1 min on baking sheet, and then remove to a wire rack to cool.
Sounds good. Are these more moist or meaty? I figured meaty.
